Hi there! My name is Bri Phillips, and I am the owner and operator of Blue Bicycle Bakery LLC, a small cottage food business based in Lebanon, IL.
I’ve lived in St Clair County for more than 25 years, and am a self-taught baker. When I’m not at a farmer’s market or baking another batch of Baklava cookies, I’m studying recipes (especially historic recipes, which I delight in) and spice and flavor pairings (psst, add ground coriander to your blueberry recipes, it makes the blueberry flavor stronger!).
My two favorite cooking-related books are “The First American Cookbook:” A Facsimile of ‘American Cookery,’ 1796, by Amelia Simmons, and “The Flavor Thesaurus,” 2010, by Niki Segnit.
While mine may be a small cottage food business in a little town, my hope is to make a great impact on our community in multiple ways!
Everyone should be able to enjoy an excellent treat from Blue Bicycle Bakery.
That means that I am working to widen my offerings to include more flavors and varieties, and serve a greater diversity of dietary needs, such as gluten-free, low-sugar, vegan, and more.
As new offerings are made available, they will be featured on this website and on social media.
Through my business I aim to serve the needs of our community by providing fresh, delicious and fairly-priced cookies for every kind of occasion.
I also support my town by donating baked goods to events such as the annual Lebanon Emerald Mound Fire Department Picnic.
It’s a fact: Many local makers, creators and doers struggle to realize any kind of success or financial solvency through their work even after years (or decades) of hard work, planning and selling.
Therefore a distant, though distinct, goal of mine is to form a cooperative of like-minded members who value local ingenuity and effort. Through shared and democratic ownership of a market space, we can ensure that our community has access to the freshest and most affordable local produce, dairy, spirits, artwork, baked goods, services and more.
In reality, what I am describing was commonplace in the last century. I believe we can, and SHOULD, find our way back to this structure where makers and doers support their community, and vice versa.
